"To know the main hazards, public health and spoilage associated to the presence of unicellular and pluricellular organisms in foods and their control. To teach the useful aspects of microorganisms in foods, and the principles of food hygiene.
Incidence and types of organisms in foods. Microbial ecology of foods. Spoilage of foods by organisms. Food borne diseases caused by microorganisms. Foodborne parasites. Food hygiene (personal, products and processes). Microbial food analysis." " |
