General description |
It introduces the student to the wide range of processing techniques that are in food preservation and processing. It is an overview of most of unit operations providing, at the same time, details of the processing equipment and the effect of processing on the biochemistry of foods. It also relates applications of the proceses in the agricultural and food industry. " |
